Hva gj\u00f8r vi med kaker og slikt? Kan vi n\u00e5 heretter glemme \u00e5 spise vaffler, muffins, sjokoladekake eller annet?<\/p>\n<p>Neida! Trikset er \u00e5 ikke bruke <em>mel<\/em>. Eller Sukker for den saks skyld. Jeg bakte for noen uker siden noen kjempegode muffins. Min mann er ikke s\u00e5 begeistret for mye n\u00f8ttesmak s\u00e5 hans entusiasme er noe begresnet, men det er jo spiselig da, mente han. Jeg tar det som et kompliment \ud83d\ude42<\/p>\n<p>2 kopper finmalt mandelmel (kaffekvern funker bra som kvern)<br \/>\n2 ss s\u00f8tningsmiddel<br \/>\n1 ts bakepulver (jeg tok 3)<br \/>\n4 egg (romtempererte)<br \/>\n1\/2 kopp smeltet sm\u00f8r<br \/>\n1\/2 kopp kremfl\u00f8te<br \/>\n1 ss sitronjuice<br \/>\n1 ts vaniljeekstrakt<br \/>\n1 kopp bl\u00e5b\u00e6r, gjerne frosne.<\/p>\n<p>R\u00f8r sammen de t\u00f8rre ingrediensene, v\u00e6r gjerne raus med bakepulveret og stryk ikke skjea. Mandelmel er tyngre \u00e5 heve enn mel, og du kan gjerne ogs\u00e5 bruke finmalt kokos for kokos-muffins! Men som sagt, r\u00f8r sammen de t\u00f8rre ingrediensene i en bolle. Visp sammen alt det v\u00e5te, unntatt b\u00e6rene, i en annen bolle. Til sist r\u00f8rer du sammen det v\u00e5te og det t\u00f8rre. Aller sist r\u00f8rer du inn frosne b\u00e6r.<\/p>\n<p>Om du bruker teflonformer kan det v\u00e6re fordel \u00e5 legge en runding av bakepapir i bunnen f\u00f8r du har r\u00f8ra i formene. Bruker du papirformer kan disse med fordel pensles med litt smeltet sm\u00f8r.<br \/>\nR\u00f8ra passer til 12 store muffinsformer, st\u00f8rrelse amerikansk jumbomuffins, eller 24 sm\u00e5 vanlige muffinsformer. Fyll ikke for mye i formene om det er papir, r\u00f8ra er &#8220;tyngre&#8221; enn vanlig muffinsr\u00f8re og formene mister lett fasongen.<\/p>\n<p>Stekes ved 175 grader i 20-25 minutter til de har hevet seg og blitt gyldenbrune. Avkj\u00f8les minst 10 minutter i formene f\u00f8r man fors\u00f8ker l\u00f8sne dem fra formen (teflonformer).
